If you love avocados and a kick of spice, guacamole dip is your perfect snack or meal. Did you know that avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid? Avocados also help the body absorb fat-soluble nutrients such as alpha- and beta-carotene and lutein. Try this easy guacamole recipe for lunch; serve on multi-grain crackers.
What you’ll need for this guacamole recipe:
- Avocados (2)
- Pico De Gallo mix
- Green peas (optional)
Recipe for how to make your own Pico De Gallo:
Chop up 4 Roma tomatoes, 1 medium shallot, 1 garlic clove, 1 jalapeno pepper (optional for spice), and some cilantro. Squeeze in a whole lime and season with salt and pepper.
Our recipe includes peas as an optional ingredient because peas are an excellent source of protein, vitamins and minerals, and help regulate blood sugar levels. One cup of peas provides over 60% of your daily recommended amount of fiber.
